A la carte sales help keep food services in the black; changes will result in lost revenue.
Many school districts have not seen revenue losses even when providing healthier a la carte foods and eliminating less healthy ones. In fact, a number of school districts have seen an increase in sales. In addition, when healthier a la carte items are offered, participation in the school meal program tends to increase, thereby providing that school with more federal funds from USDA. Many success stories are available and should be used in educating others about the revenue issues in changing cafeteria offerings.
